Rustic Caramel Apple Galette with Brie

You’re the apple of my pie! You're going to love this Un-Brie-Lievable™ dessert, trust us.
Ingredients

1 wedge of Un-Brie-Lievable™ (use less for a less cheesy taste)
- 1.50 cups of flour (if using gluten-free, make sure to get a brand that has xanthan gum in it)
141 g of vegan butter, softened (approx 10 tbsp)
- 4-5 tbsp cold water
- 3-4 apples of choice (we used honey crisp)
- 2 tsp cinnamon
- ¼ tsp nutmeg
- 1 tbsp vanilla
- ¼ cup maple syrup
- 1 tbsp lemon juice (1/2 lemon juiced)
- 2 tsp arrowroot, or corn starch
- ½ tsp sea salt
- 1 tbsp cane sugar, to sprinkle on the tart
- 1 cup coconut sugar, or brown sugar
- 1 can of coconut milk, chilled
- ½ wedge of Un-Brie-Lievable
- 1 tbsp vanilla
- ½ tsp sea salt
- Garnish: vegan whipped cream or ice cream

Caramel Sauce
Directions
Prepare the pie crust by adding your flour to a mixing bowl. Cut the butter into the flour and begin to mix the butter into the flour using your hands (working it into your palms with a smearing motion).
After the butter has been thoroughly blended into the flour, start adding 4 Tbsp of water to the mix. Mix with your hands until a dough ball forms. If it’s too dry, add the last Tbsp of water. It’s important that your mixture isn’t too dry or else it will result in a dry tart. The dough ball should be able to form nicely in your hands and you can manipulate it and it will hold its shape.
Cover the dough ball and place in the fridge until the apple mixture is ready.
Preheat oven to 375 degrees F.
Peel and thinly slice the apples and place them in another mixing bowl. Add the cinnamon, nutmeg, vanilla, maple syrup, lemon juice and arrowroot powder and toss to combine. Set aside.
Remove the galette crust from the refrigerator. Place the dough on a parchment sheet, sprinkled with some flour.
Roll out the dough to about 1/8” thickness (it’s important to keep it thin so that you can fit all of your filling in it).
Place the parchment with the dough on it on a baking sheet.
Add the apple pie filling to the center of the crust, leaving about 4 inches around the edges. Try to make sure there are no gaps or holes in your dough, as the pie will seep out of them when it cooks. You may have some apple filling left over, depending on the size of the apples.
Roll up the sides of the crust over the filling.
Sprinkle the crust with cane sugar.
Add the galette to the oven and bake until the pie crust is brown and center is bubbly, about 50 minutes.
Caramel Sauce
Meanwhile, make your caramel sauce by adding your coconut sugar, the thick part of the chilled coconut milk can, half a block of Nuts for Cheese™ Un-Brie-Lievable™, vanilla and sea salt to a pot. Bring to a bowl and then reduce heat.
Let simmer for about 8 minutes, until desired consistency.
Once the galette is cooked, remove from the oven and let it cool. Serve with a drizzle of caramel sauce, ice cream or whipped cream.
