Ingredients

¼ wedge Nuts For Cheese Un-Brie-Lievable

1 Package oomé Greek Smoked Tofu

¼ cup cucumber, chopped into cubes

¼ cup bell pepper, chopped into cubes
-
¼ tomato, diced into cubes
-
fresh parsley, for garnish

1 tbsp corn starch
-
1 tbsp Kalamata olives, pitted & chopped
-
1 tsp olive oil
-
salt & pepper to taste

¼ cup red onion, thinly sliced
Directions
Slice your tofu lengthwise into long, finger-like pieces. You should get roughly 8 pieces from one package if you’re using a package of oomé Tofu.
Lightly coat the tofu with cornstarch, tossing until each piece is evenly coated.
Arrange the tofu in a single layer on an air fryer tray and cook at 350°F, flipping halfway through, for about 5 minutes per side or until golden and crisp.
In a seperate bowl, combine chopped cucumber, bell pepper, tomato, black olives, red onion, drizzle of olive oil, and salt and pepper. Mix to combine.
Cut up a wedge of Nuts For Cheese Un-Brie-Lievable cashew cheese into small cubes.
When your tofu strips are finished cooking, arrange them on a tray and top with your greek veggie salad and Nuts For Cheese Un-Brie-Lievable cashew cheese cubes. Finish with fresh parsley for garnish.
