Sweet, citrusy, bright, and down right delicious. This lemon poppyseed loaf is simple enough for a quick and easy breakfast or fancy enough for afternoon tea with friends.
Lemon Poppyseed Loaf Cake
- 2 cups flour
- 1 cup sugar
- 2.5 tsp baking powder
- 1/4 tsp salt
- 1 tsp vanilla extract
- 1/2 tsp lemon extract
- 1/3 cup lemon juice
- zest of 1 large lemon (or 2 medium)
- 1/2 cup + 3 tbsp plant milk
1/2 cup melted Unsalted Nuts For Butter
- 2 tsp poppy seeds
- preheat oven to 350°F.
In one bowl add the sugar, flour, salt, and baking powder.
In another bowl add the remaining wet ingredients.
Combine the wet ingredients into the dry. Add the poppy seeds & mix until just combined.
Pour mixture into greased loaf pan.
Bake for 50 minutes to 1 hour or until a toothpick comes out clean!
To make the glaze, combine powdered sugar with plant milk.
