Dirty Martini, but make it pasta. Your newest summer salad obsession.
Ingredients

1 wedge of Nuts For Cheese Super Blue

1 box Chickapea pasta

½ lemon juiced
-
½ lemon zest
-
2-3 tbsp olive brine depending on preference

1 cup large green olives, sliced in half

¼ cup olive oil
-
¼ cup reserved pasta water

Freshly cracked black pepper, to taste
Directions
Cook 1 box of Chickapea pasta according to package directions, until al dente. Before draining, reserve ¼ cup of pasta water from the pot. Drian and set aside
In the same pot off the heat, crumble in 1 Nuts For Cheese Super Blue Cheese Wedge. Add in the olive oil, olive brine, lemon juice, and reserved pasta water. Stir together until the blue cheese begins to melt into a loose, creamy sauce.
Add the drained pasta to the sauce and toss well to coat. Fold in the green olives, sliced in half and the lemon zest. Season generously with freshly cracked black pepper, to taste.
Plate immediately and finish with an extra crack of black pepper and a drizzle of olive oil if desired. Best enjoyed warm
