Crispy, creamy, protein-packed Caesar salad nachos!
Ingredients
Dressing

1 wedge of Nuts For Cheese Un-Brie-Lievable
-
1 clove garlic
-
3 tbsp lemon juice
-
1 tsp capers
-
¼ cup extra virgin olive oil
-
¼ tsp fresh cracked black pepper
-
water as needed
Toppings
-
Kale, torn
-
1-2 tbsp olive oil
-
Salt to taste
-
1 can of chickpeas
-
1 tsp garlic powder
-
1 tsp onion powder
-
1 tsp paprika
-
1 block tempeh, crumbled
-
1-2 tbsp soy sauce
-
1 tbsp agave syrup
-
½-1tsp liquid smoke
-
Your choice of chips
Directions
Dressing
Add all ingredients to a blender or food processor and blend until smooth
Add water to think to desired consistency
Nachos
Place torn kale in large bowl. Added olive oil and salt. Massage for 1 to 2 minutes until softened and darker green. Set aside
Drain the can of chickpeas and pat dry.
toss the chickpeas in the garlic powder, onion powder, paprika and salt until evenly coated and place on a parchment lined sheet pan.
place the chickpeas into the oven at 400 degrees Farienhight for 20 to 25 minutes or until warm a lightly crispy.
In a pan over medium heat, add the crumbled tempeh, soy sauce, agave, and liquid smoke. make sure the liquids coat the tempeh. Cook for 5 to 7 minutes until browned.
Assemble your nachos and drizzle the Caesar dressing on top. Add extra salt and pepper to taste and enjoy.
