Brie Phyllo Rolls With Balsamic & Blueberry Compote

Smoke and a pancake? Flapjack and a cigarette? Cigar and a waffle? I think what I’m trying to say ... is that these Brie and Blueberry Phyllo Cigars are a fabulous way to round out your week.
Ingredients
- 6 sheets of phyllo

1 wedge of Un-Brie-Lievable™
- 2 tbsp olive oil or avocado oil
- 2 tbsp cane sugar
- powdered sugar (optional for dressing)
- 1 cup frozen blueberries
- 2 tbsp cane sugar
- 2 tbsp balsamic vinegar
- 1 lemon, juiced
- ¼ cup water

Compote
Directions
- Preheat the oven to 400 F.
- Start making the compote by adding all of the compote ingredients to a saucepan over medium heat and bring to a boil.
- Reduce the heat to medium-low and let simmer for about 10 minutes until there is a thick consistency (you should be able to see the bottom of the pan when you scrape it with a wood spoon). Set aside to cool.
- Meanwhile, to assemble the phyllo rolls remove 6 phyllo sheets out of the package (make sure it’s thawed if previously frozen).
Cut the wedge of Un-Brie-Lievable™ into about 24 slices and divide them into 6 piles.
- Take out 1 phyllo and at the far edge line about 2 Tbsp of the compote in a vertical line, then place the cheese on top of it. Roll the edge in once, then fold the bottoms up and continue to roll until it’s all rolled nicely.
- Place on a parchment lined baking tray. Repeat 5 more times.
- Once all the rolls are placed on the parchment, take a brush and brush oil over all of them, then sprinkle with coarse cane sugar.
- Bake for 18-20 minutes until golden.
- Sprinkle with powdered sugar if desired.
