Warm Farro Salad with Roasted Vegetables
1 cup cooked pearl couscous
1 bunch of massaged and chopped kale
1/2 cup dried cranberries
1/4 cup sunflower or pumpkin seeds
1/2 wedge of Nuts For Cheese Super Blue
1 sweet potato cubed and baked
1 cup raw cashews
1 1/2 cup hot water
1 tsp garlic powder
1/2 tsp nutmeg
2 tbsp lemon juice
Salt and pepper
Start by making the cashew cream dressing by combining all ingredients in a blender until smooth.
Assemble your salad by placing couscous on the bottom, then kale, cranberries, seeds, sweet potato and crumbled Nuts For Cheese Super Blue
Top with dressing, mix and enjoy!
