Ingredients
3 large white potatoes, cut into 1” pieces

1 wedge Black Garlic Nuts For Cheese

4 tbsp Herb & Garlic Nuts For Butter
2-3 tbsp non-dairy milk

1 tbsp Herb & Garlic Nuts for Butter
1.5 cups kale, chopped

1 tbsp Herb & Garlic Nuts For Butter
2 medium carrots, sliced in half moons
1 tbsp soy sauce
1 tbsp maple syrup

1 tbsp Herb & Garlic Nuts For Butter
2 cups mushrooms, quartered
1 tbsp soy sauce
Cheesy Garlic Mashed Potatoes

Directions
To make the mashed potatoes:
Bring a large pot of salted water to a rolling boil. Add potatoes and cook until fork tender.
Drain the water, and gently mash until most chunks of potatoes are gone.
Add Black Garlic Nut for Cheese, Herb & Garlic Nuts for Butter, and non-dairy milk and continue mashing until creamy and smooth.
To make sauteed kale:
Heat a small frying pan over medium heat woot he Herb & Garlic Nuts for Butter. Once warm add the chopped kale, a splash of water, and top with a lid to steam.
Once the kale is a vibrant green and softened, remove the lid and continue cooking for about 1-2 more minutes.
Remove the kale from the pan and set aside.
To make maple glazed carrots:
To the same pan over medium heat add Herb & Garlic Nuts for Butter and warm. Once warm, add carrots and saute for 5 minutes, stirring frequently.
Add the soy sauce and maple syrup and toss. Continue to cook until they’re fork tender and golden brown. Remove from the pan and set aside.
To make sauteed mushrooms:
To the same pan, heat over medium heat again with Herb & Garlic Nuts for Butter. Once warm, add mushrooms and toss to coat. Cook the mushrooms for about 5 minutes stirring frequently so they can cook evenly on all sides.
Add soy sauce and continue cooking until golden brown.
Remove from the heat and set aside.
To construct bowl:
Add mashed potatoes and top with veggie toppings. We also like to add an extra slice of Herb & garlic Nuts for Butter to the top of the mashed potatoes just before serving.
