I only have fries for you... Greek Fries, that is! We're loving this fully loaded Greek-inspired poutine. Loaded with vegetables, it's practically a salad, right?
Ingredients
- fries- either 1 pack of frozen or slice 2 russet potatoes into fry slices, let soak in water, drain and pat dry
- 1 tbsp olive oil
- 2 tsp garlic powder
- 1 tsp onion powder
- ½ tsp smoked paprika
- ½ tsp thyme
- ½ tsp oregano
- salt and pepper
1 cup cherry tomatoes, chopped
- ½ cucumber, diced
- 5-6 olives, sliced
- 1 tsp oregano
- 1 tbsp olive oil
- ½ tbsp apple cider vinegar (or white wine vinegar)

- 1 lemon, juiced
- 1 garlic clove, pressed or minced
- 1 tsp cumin
- salt and pepper

Directions
- Add your fries to a bowl with oil and the fry seasoning. Toss to coat.
- Add your fries to an air fryer on 375 degrees for 15 minutes, tossing every 5 minutes. Alternatively, bake your fries according to package- or if you are cooking fresh fries, bake at 415 degrees on a flat sheet pan for 30 minutes, flipping halfway.
- Marinate your greek salad by adding everything to a bowl and tossing to coat
- Make your yogurt dressing by adding to a small bowl and whisking together until thoroughly combined.
- Once the fries are cooked, add them to a serving tray, drizzle the dressing on top and top the greek salad on top of your fries in a layer.
- Add Artichoke & Herb 'chunks' to top and garnish with green onion or parsley.
