This smoky gouda cauliflower bake holds a special place in our heart.
It's not your typical "bake" or casserole dish. Nope. It's hearty, comforting, smoky, and oh so cheesy! This dish quickly topped our list of favorite side dishes. You'll understand why.
Ingredients
1 head cauliflower

2 tbsp Unsalted Nuts For Butter
2 ½ tbsp all-purpose flour
1 ½ cup non-dairy milk
Salt & pepper, to taste
1 tsp mustard powder
1 tsp garlic powder

1 wedge Nuts For Cheese Smoky Gouda
1 stalk green onion, sliced
Directions
Preheat the oven to 350F.
Wash then chop cauliflower into bite sized pieces.
Bring a medium-pot of water to a boil and season with a generous amount of salt. Add cauliflower to the boiling water and cook for about 5-7 minutes or until the cauliflower is just fork tender. Drain and set aside.
In a small saucepan over medium heat melt butter, then add all-purpose flour and whisk vigorously to make a roux. Continue whisking for 1-2 minutes.
While whisking, slowly drizzle in non-dairy milk until all incorporated. Cook whisking occasionally until it just starts to thicken – about 4-5 minutes.
Once the milk has thickened, whisk in the salt, pepper, mustard powder, and garlic powder. Then add the Nuts for Cheese Smoky Gouda and whisk until you get a thick and creamy sauce.
Once the sauce has thickened, pour over the cauliflower and toss to combine.
Pour the cheesy cauliflower mixture into a shallow oven-safe baking dish and bake in the preheated oven for 20 minutes.
When fully cooked, sprinkle with green onions and serve warm.
