Just a dairy-free girl living in a barbie world. Vegan, no-bake strawberry cheesecake to celebrate the premier of the Barbie Movie!
Ingredients

3 tubs Nuts For Cheese Original Cream Cheese
1/2 cup coconut oil, melted
- 3 cups frozen strawberries
- 1/4 cup maple syrup
- Juice from 2 lemons
1 can cherry pie filling (or homemade cherry compote - frozen cherries, lemon juice, Nuts For Butter)
Cookie crumbs (store-bought or homemade)
2 tsbp maple syrup
2 tsp vanilla
Pinch of sea salt

Directions
Add the cookie crumbles, maple syrup, vanilla and sea salt to a food processor until evenly finely ground.
Press the cookie crumble mixture into the base of the cake tin. Set aside in the fridge while you prepare the filling.
Add all cheesecake filling ingredients to a blender and blitz until smooth and creamy. Pour the mixture into the cake pan and place back in the fridge to set for a few hours (or overnight).
Top with cherry filling or homemade compote and enjoy!
