Toast with Rapini & Leeks
2 tsp olive oil
1 leek, sliced in half lengthwise and then chopped into half moons
3 garlic cloves, minced finely
½ bunch of rapini, sliced into thirds
¼ tsp salt
¼ tsp black pepper
1 wedge of Nuts For Cheese's Super "Blue" (1-2 tbsp per slice)
2 tsp red pepper flakes
6 slices of bread, toasted
In a medium sized frying pan, heat oil over medium heat, add leeks once warm. Cook for 4 minutes.
Add garlic and cook out for 30 seconds. Add in rapini, and cook for another 4 minutes.
Season with salt and pepper.
Spread 1-2 tbsp blue cheese on each slice of toast. Top with ⅙ of the leek & rapini mixture and sprinkle red pepper flakes on top.
Serving Size 2 slices of toast
