2 tubs Garlic & Herb Cream Cheese
Tomatoes (cherry & heirloom), sliced
1 sheet vegan puff pastry
2 tbsp olive oil
1 tbsp soy milk
1-2 tbsp capers
Flaky sea salt
Ground black pepper
whole basil leaves for garnish
olive oil drizzle, optional
Directions
Preheat oven to 400°F and line a rimmed baking sheet with parchment paper.
Roll out the puff pastry to a 9 x 13 inch rectangle on a floured surface and arrange on baking sheet.
Score a 1-inch border around the edge of the puff pastry and poke holes in the center with a fork.
In a small bowl, whisk together olive oil and soy milk. Brush the puff pastry sheet with the mixture.
Place the baking sheet into the oven and bake for about 15 minutes, until golden.
Push down the center of the pull pastry with a spoon, keeping the edges puffed up.
Spread Garlic & Herb Cream Cheese in the center of the puff pastry. Arrange sliced tomatoes and capers, and add drizzled olive oil, flaky sea salt, and black pepper. Bake for another 10-15 minutes.
Place basil leaves on top for garnish, slice and serve!
