Heat up a skillet over medium (or a grill to medium)
Slice veggies thin
Brush veggies with olive oil and pan fry or grill until soft and lightly charred
Toast bread and assemble sandwich with as much cheese as you like (we used a lot because... it's delicious), layer with spinach and veggies
Additional topping ideas: hummus, grain mustard, pickles
