While we weren’t quick enough on the uptake to photoshop Bernie’s mittened hands around our cheese we are “once again asking” to join the ranks of internet trendiness with our rendition of the tortilla hack. You’ve seen this a few times now, sure, and maybe it’s starting to feel a bit like Groundhog Day? Well, that’s because it is! A little late to the party, but: we’re here! we’re folding up a sphere! and we’re going to enjoy this cheesy breakfast pocket quesadilla with a beer!

 Scrambled Tofu
 Salsa or Pico De Gallo
 Nuts For Cheese Chipotle Cheddar
 Avocado
 Lettuce

Tortilla - slit in the middle half way up.

Assemble with whatever breakfast ingredients you want to fill in your tortilla (reserve 4 sections for your ingredients).

Once assembled, fold each corner one by one until you get your tortilla triangle.

Eat plain or add to your pan and grill for 3 minutes on each side to melt cheese and crisp up the tortilla!
